One of the things I love most about being a part of a veggie club, is that it forces me to get creative with the fruits/veggies I get in the amount I get them.
On my last pick up I got some grapefruits and a ridiculous amount of avocados.
Hugh ate one of the grapefruits but the ones I had left needed a purpose. As for the avocados, there is only enough salted avocado I’m willing to eat and we get our guacamole from a really nice Mexican family at the farmer’s market. So after looking around for recipes and trying to come up with a reasonable simple alternative, I got this:
Avocado, Bacon and Tomato Tartines
Ingredients:
4 slices of country bread (I got mine at the market from Crackerman)
1/2 cup of aioli (I made it with garlic, salt, eggs, Dijon mustard, lemon juice and EVOO)
2 sliced tomatoes
8 slices of bacon (I used prosciutto cotto and cooked it again)
1 avocado sliced
Preparation:
Preheat a broiler.
Toast the bread in the broiler on a baking sheet for a few minutes. Spread the aioli on the bread and top with tomato slices. Season with salt and top the tomato with the bacon and then the avocado. Sprinkle some salt on it and serve right away.
Broiled Grapefruit with Brown Sugar
Ingredients:
3 grapefruits
6 Tbsp of light brown sugar (I used 2tbsp of Brown Splenda Baking Blend)
Preparation:
Preheat a broiler.
Half the grapefruits crosswise and arrange them cut side up on a baking sheet with aluminum foil. Sprinkle each half with the sugar in more or less equal amounts. Place under the broiler for about 3 minutes until the sugar melts and it looks like it is bubbling. Serve right away.
These recipes are adaptations of others I came into contact with. They are so good though! I can assure you that they will be a hit!
